Sweet and Sour Eggplant
How do you eat vinegar?
For cold dishes and dipping dumplings, you need vinegar that is sour but not bitter, with a slight sweetness. For dishes with a sweet and sour flavor and rich red meat sauce, choose aged vinegar with a strong sour-sweet taste and a lingering aftertaste. For stir-fried vegetables like sour cabbage or marinated meat, opt for rice vinegar with a light yellowish hue. When simmering ribs or making soup, transparent, clear white vinegar is the best choice.
